Due to the Oxford Swim Club gala our pools will sadly be closed the weekend of 23rd & 24th November with lessons and casual swim sessions cancelled across the weekend. We apologise for any inconvenience caused by this weekend closure.

Easy Veggie Sushi Recipe

Craving something fresh and healthy for lunch? Why not try our easy veggie sushi recipe? 
Try out these delicious sushi rolls with avocado, peppers or cucumber for a tasty, homemade treat!

Serves: 4 people (8 pieces each)

  • 300g Sushi rice
  • 4 Nori seaweed sheets
  • 4 tbsp Rice vinegar
  • 1 tbsp Sugar
  • 1 tsp Salt
  • Your choice of vegetables such as ½ avocado, 1 red pepper or 1cm piece of cucumber
  • Soy sauce (optional)
  • Wasabi (optional)

  • Equipment: bamboo sushi mat

Step 1. Cook sushi rice according to package instructions and let it cool.

Step 2. Mix rice vinegar, sugar, and salt to make sushi rice seasoning, then fold it into the cooked rice.

Step 3. Lay a sheet of nori on a bamboo sushi mat.

Step 4. Moisten your hands with water and spread a thin layer of sushi rice on the nori, leaving a small border at the top.

Step 5. Prepare your choice of veggies; peel and slice the avocado, slice the cucumber into thin matchsticks, removing the seeds, chop the red pepper into thin slices.

Step 6. Arrange your choice of vegetables in the centre of the rice.

Step 7. Roll the sushi using the bamboo mat, applying gentle pressure to shape it.

Step 8. Use a sharp knife to slice the roll into bite-sized pieces.

Step 9. Serve with soy sauce and wasabi (optional) on the side. Enjoy your homemade sushi! 🍣
